Coconut Curried Sausages Slow Cooker
You are here: Home / Dinner / Coconut Curried Sasuages
This is seriously one of the easiest/yummiest dinners I've ever made. You can't beat throwing stuff in the slow cooker and leaving it all day, getting home from training or work and dinner being ready to eat straight away :). Plus there's not too many ingredients to think about and you can throw literally any vegetables you have left over into it.
P.S Sorry about the terrible pictures, but I was so excited to eat I actually forgot to take one until I had it for leftovers at lunch the next day haha
Coconut curried sausages
Ingredients
8-10 venison sausages (or another type but fat ones work best)
1 kumara
2 small potatoes
Peas
Beans
Carrots
4 cloves garlic crushed up
2 cans coconut milk or cream
2 T curry powder or more if you feel it needs it.
Salt and pepper
Brown or white rice to serve
Method
Cut sausages into bite-sized pieces, about 4-5 pieces each sausage.
Cut all the veggies up into chunks and place in the slow cooker along with the sausages.
Add coconut milk, garlic and curry powder and then leave in the slow cooker on low for 5-6 hours, which is how I did mine, or high for 2-3 hours.
All you need to do now is have the rice ready when you're all set to eat and serve your curry on top of it :).
Enjoy and even better take the leftovers for lunch the next day!!
